Brown Sugar Butter Topped Banana Bread

This wonderful recipe is from “The Farmer’s Market Cookbook”, it is simple and delicious; blending all-purpose and wheat flour for added nutrients and flavor.

Ingredients:

3 Overripe Bananas
2 Eggs
1/2 cup Butter
1 cup Sugar
1 cup Whole Wheat Flour
1 cup All-purpose Flour
1 teaspoon Baking Soda
1 teaspoon Salt
1/3 cup Hot Water
1/2 cup Chopped Walnuts (optional)

1. Mash the bananas in a large bowl until they are creamy

2. Add the eggs to the banana mash and beat

3. Melt the butter over low heat and allow it to cool slightly

4. Stir the sugar into the melted butter

5. Add the sugar and butter to the banana-egg mixture and blend

6. In a separate bowl combine the all-purpose flour, whole wheat flour, salt, and baking soda

7. Alternate adding the dry ingredients and 1/3 of a cup hot water to the banana mixture until well blended

7. Stir in the walnuts (optional)

8. Pour the batter into one greased loaf pan

8. Bake at 350º for 60 minutes

Topping:

4 tablespoons Melted Butter
1/2 cup Brown Sugar

9. Mix the topping ingredients and spread over the warm banana bread

10. Allow the topping to cool and harden before serving
